I'm always looking for good breakfast foods that are fairly quick & simple, since my kids want to eat when they get up.
And Andrew needs to get out the door.
We like this recipe, it's tasty, healthy & filling. They make great snacks as well!
Buttermilk Oatmeal Muffins
- 1 cup quick-cooking oats
- 1 cup buttermilk (add 1 tbsp. of lemon juice to regular milk and let it sit for 5 minutes, if you don't have buttermilk on hand.)
- 1 egg, beaten
- 1/2 cup packed brown sugar
- 1/4 cup apple sauce
- 1 cup all-purpose flour (whole wheat flour also works)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
